We have Angus Steers, Heifers and Holstein Steers, Heifers.
About 2 weeks. After we receive your deposit, the cattle manager will separate the type of animal selected and send it to harvest usually in 10 days. From there it will take about 2 weeks before your order is ready for pick up.
From ordering to pick up, the total delivery time is about 5 to 6 weeks.
Our current butcher location is in Corcoran, CA.
The butcher will contact you by phone before packaging to find your cutting preference. All cuts will be vacuum sealed.
Unfortunately, the butcher will not be able to divide the order for you and others for a group purchase. However, you may communicate to the butcher that you have a group and would like to split the whole order. They can try to accommodate your needs as best they can (such as smaller cuts, etc.).
Holstein beef is leaner. It has lower fat, bigger bones, and a milder flavor while Angus beef is superior, has more marbling, and a stronger flavor.
Our ranches are located in the Tulare Lake area.
Our cattle are all free range. They are grass fed and grain finished. We use no hormones or antibiotics. They are raised on a free-range pasture then brought to one of our feedlots for finishing. We work closely with our veterinarian and nutritionist to ensure the highest quality and happiest cattle possible.
Approximately 14 days after the cattle is harvested. The butcher will contact you and you will select your cuts.
Yes, we age our beef for 5 to 7 days.
Our pick up location is in downtown Corcoran, CA. We offer free local delivery within a 15-mile radius of our butcher shop in Corcoran. California delivery is available by special request with an additional cost ($1.00/per mile round trip). When the beef is ready for shipping, the customer will be contacted to schedule a delivery time with our driver. Our beef is ice-packed in boxes and transported in refrigerated freezer trucks. Our drivers will then hand-deliver the frozen beef straight to the customer.
A beef carcass is over 70% water. During the 5-14 days of chilled aging, water evaporation will cause the final weight to be reduced significantly. It common for the carcass to lose 5% of its weight in the first 24 hours. When it makes it to the butcher floor, fat and bone will reduce the weight further (by about 20%). You can expect no more than 70% of the carcass weight in packaged meat. Based on an estimated weight of 850 lbs, a full carcass will yield about 600 lbs after aging and processing.
Our cattle are about 2 years old when we harvest.
Cattle order does not include organs, organs can be purchased directly at the butcher shop when picking up your order.
